Why it exists

The whole story, plainly.

Most “from scratch” starters ask you to nurse flour and water for a week and hope. This jar skips the guesswork. Inside is a living culture that already exists — vigorous, balanced and ready — simply paused by careful drying.

It is fed on organic whole wheat, rye, 00 and einkorn flours with reverse-osmosis water, then dehydrated low and slow so the wild yeast and lactic bacteria survive intact. Nothing is added to preserve it. Nothing needs to be.
